Swede is a criminally underrated vegetable and way more versatile than people think.

It’s hard to over look crushed swede so I fully see why people don’t look much beyond it!

Simple, comforting and totally delicious! Crushed swede is one of those quick, easy side dishes that really delivers bang for your buck as far as effort and cost goes!

Make it vegan with spread or vegan butter, eat it hot or cold!

Play around with the texture! Mash it a bit more for a smoother finish or mash a little more gently if you prefer a few swede-y chunks knocking around!

INGREDIENTS:

1 Swede

1 Tbsp Butter, Spread or Vegan Butter

Pinch of Salt

METHOD:

  1. Peel and chop the swede in to 10mm chunks

  2. Add to a saucepan and cover with water

  3. Add a pinch of salt, place a lid on top and bring to a boil

  4. Boil the swede for around 15 minutes until it is completely soft

  5. Drain well and return to the pan, turn the heat off, add the butter and using either a fork or a potato masher, crush or mash the swede until as crushed as you like it!

  6. Taste and adjust the seasoning and serve!
