A total flavour bomb!

Fresh, fiery and ready to bring just about any dish alive!

This isn’t like an Italian sort of salsa verde, but more a Mexican style!

Hot chillies, fresh herbs, fresh green tomatoes - magic!

Having recipes like this made, in your fridge, ready to go is amazing! It’s just about getting organised! Not that this needs much organisation - it’s literally just all whizzed together in a blender or food processor!

INGREDIENTS:

500g Green Tomatoes

100g Fermented Chillies in Brine or 1 Jar Jalapeños In Brine

Handful Fresh Mint Leaves

Handful Fresh Coriander Leaves

1 Dsp Sugar or Honey

Good Pinch Salt

METHOD:

  1. Roughly chop the tomatoes and add to a blender or food processor

  2. Add the fermented chillies or jalapeños with their brine to the blender, along with the fresh herbs, sugar and salt

  3. Blend until you reach the desired texture - it shouldn’t be completely smooth

  4. Taste and adjust the seasoning.
